
Because nothing says “love” like carbs made from scratch and extra garlic
This recipe is a triple threat: fresh, flavorful, and destined to make your kitchen look like a rom-com set in Italy. From kneading the dough to inhaling that first waft of garlic bread fresh out of the oven, it’s the culinary equivalent of a standing ovation. Whether you’re channeling your inner Nonna or just really craving carbs, this is the kind of meal that turns “family dinner” into a full-blown food event.
Ingredients:
- For the Pasta:
- 2 cups all-purpose flour (plus extra for dusting)
- 3 large eggs
- 1 tsp olive oil
- ½ tsp salt
- For the Sauce:
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 (28 oz) can crushed tomatoes or you can puree Roma tomatoes and cook down
- 1 tsp sugar
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp of crushed dry red peppers
- Salt and pepper, to taste
- Fresh basil, for garnish
- For the Garlic Bread:
- 1 baguette or Italian loaf, sliced lengthwise
- 4 tbsp unsalted butter, softened
- 2 garlic cloves, minced
- 1 tbsp fresh parsley, chopped
- ¼ cup Parmesan cheese (optional)
Instructions:
- Make the Pasta.
- On a clean surface or large bowl, make a mound with the flour and create a well in the center. Crack the eggs into the well, add the olive oil and salt. Gradually mix the flour into the eggs until a dough forms.
- Knead the dough for 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.
- Roll out the dough thinly and cut into your favorite pasta shape (fettuccine, linguine, spaghetti, etc.-I have used my Kitchenaid attachments for this, but there are other ways, which I have no problem sharing). Cook in boiling salted water for 2-3 minutes.
- Make the Sauce. Heat olive oil in a pan over medium heat. Add garlic and sauté until fragrant. Stir in crushed tomatoes (or fresh tomatoes), sugar, oregano, basil, crushed dry peppers, salt, and pepper. Let simmer for 20 minutes, stirring occasionally.
- Make the Garlic Bread. Preheat oven to 375°F (190°C). Mix butter, garlic, parsley, and Parmesan (if using) in a bowl. Spread the mixture on the bread halves. Place on a baking sheet and bake for 10 minutes until golden and crispy.
- Serve. Toss the fresh pasta in the sauce, sprinkle with fresh basil, and serve with warm garlic bread on the side.
