If you’ve ever thought, “I love bruschetta, but what if it was, you know, more filling?” then this recipe is about to make your day. Forget about piling tomatoes on toast; we’re leveling up with juicy, seasoned chicken breasts as the base for all that fresh, tomatoey goodness. It’s like your favorite appetizer just graduated into a main course—fancy enough for a dinner party, but easy enough for a Tuesday night when you can’t deal with anything complicated. So, grab your fork (and a napkin, because things are about to get deliciously messy)!

Ingredients:

  • 2 tbsp butter or olive oil
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 ½ cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • ¼ cup fresh basil, chopped
  • 2 tbsp balsamic vinegar (I have also used champagne vinegar for a little twist)
  • 1 tbsp olive oil (for topping)
  • Fresh mozzarella or Parmesan (optional, but highly recommended)
  • Balsamic glaze for drizzling (optional)

Instructions:

  1. Season the Chicken: Preheat your grill or oven to 375°F. Brush the chicken breasts with olive oil and season generously with garlic powder, Italian seasoning, salt, and pepper.
  2. Cook the Chicken: Grill the chicken for 6-7 minutes per side until fully cooked, or bake in the oven for 25-30 minutes until the internal temperature reaches 165°F. (If you want to get fancy, add some fresh mozzarella slices on top during the last 5 minutes to melt.) Or if you want this dinner in less time and no dishes, throw it in the air fryer.
  3. Make the Bruschetta Topping: While the chicken is cooking, combine the diced cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, and a tablespoon of olive oil in a bowl. Stir together and let those flavors mingle.
  4. Assemble the Dish: Once the chicken is cooked, spoon the bruschetta mixture over each chicken breast. Drizzle with balsamic glaze for extra flavor, and sprinkle with freshly grated Parmesan if you’re feeling fancy.
  5. Serve & Enjoy: Plate your Bruschetta Chicken with a side of garlic bread, pasta, rice, or a fresh green salad, and enjoy all those summer-fresh flavors packed into every bite!

Optional Add-ins/Add-ons:

  • For extra flavor, marinate the chicken in balsamic vinegar before cooking.
