This Goat Cheese, Pecans, and Blueberry Salad is basically the Beyoncé of salads—bold, balanced, and totally in charge. It’s got the perfect blend of creamy goat cheese, sweet blueberries, and crunchy pecans, all topped with juicy chicken and a zesty lemon vinaigrette that’ll make your taste buds sing. Plus, it’s so quick to throw together, you’ll have plenty of time to sit back and pretend you’re on a fancy farm-to-table lunch date… even if it’s just in your kitchen.
Ingredients:
- For the Salad:
- 2 cups mixed greens (spinach, arugula, or a spring mix)
- 1 cup cooked chicken breast, sliced (grilled or rotisserie works perfectly)
- ¼ cup goat cheese, crumbled
- ¼ cup pecans, toasted (adds that lovely crunch)
- ½ cup fresh blueberries
- ½ avocado, sliced (optional, but always a good idea)
- 1 small cucumber, sliced
- ¼ red onion, thinly sliced
- Freshly ground black pepper, to taste
- For the Lemon Vinaigrette:
- ¼ cup olive oil
- 2 tbsp fresh lemon juice (about half a lemon)
- 1 tsp Dijon mustard
- 1 tsp honey (or maple syrup for sweetness)
- Salt and pepper, to taste
Instructions:
- Prep the Salad. In a large bowl, combine your mixed greens, blueberries, cucumber, red onion, and avocado (if using). Toss everything together so it’s ready for all the goodness that’s about to come its way.
- Add the Chicken. Place the sliced chicken on top of the salad. You can use leftover chicken, grilled chicken, or even rotisserie if you’re in a pinch. It’s your salad, live your best life.
- Crumble the Goat Cheese & Pecans. Sprinkle the crumbled goat cheese and toasted pecans over the salad like you’re topping it with edible confetti. (If you’re like me, you might sneak a few pecans while you’re at it!)
- Make the Lemon Vinaigrette. In a small bowl, whisk together the olive oil, fresh lemon juice, Dijon mustard, honey, salt, and pepper. Whisk until it’s well combined and tastes like tangy, zesty perfection. If you like it a little sweeter, add a bit more honey.
