Chicken Cordon Bleu: Crispy, Cheesy, and Oh-So-Fancy

Don’t let the French name fool you—Chicken Cordon Bleu is just a fancy way of saying “chicken stuffed with ham and cheese that will make you feel like a culinary genius.” This dish is crispy on the outside, gooey on the inside, and guaranteed to impress even the pickiest eaters. Bonus: It’s easier to make than pronouncing it.

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 4 slices of ham (preferably deli-style)
  • 4 slices of Swiss cheese
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko for extra crunch)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste

For the Sauce:

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • ½ cup chicken broth
  • ½ cup shredded Swiss cheese
  • ½ tsp Dijon mustard
  • Salt and pepper to taste

Instructions

1. Prep the Chicken

  • Preheat your oven to 375°F (190°C).
  • Place each chicken breast between two sheets of plastic wrap and pound it to about ½-inch thickness.
  • Lay a slice of ham and a slice of Swiss cheese on each chicken breast. Roll the chicken tightly, tucking in the sides, and secure with toothpicks.

2. Bread the Chicken

  • Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs mixed with Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Dredge each chicken roll in flour, dip in the egg, and coat in the breadcrumb mixture.

3. Cook the Chicken

  • Heat a skillet with a bit of oil over medium heat. Sear the chicken rolls until golden brown on all sides, about 2 minutes per side.
  • Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

4. Make the Sauce

  • In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux.
  • Gradually whisk in the milk and chicken broth, stirring constantly until the sauce thickens.
  • Stir in the shredded Swiss cheese, Dijon mustard, salt, and pepper. Remove from heat once the cheese has melted and the sauce is smooth.

5. Serve

Remove the toothpicks from the chicken and drizzle with the creamy sauce. Pair with a fresh salad or roasted veggies for a meal that’s as balanced as it is delicious.
