Chicken Gravy with Mashed Potatoes and Fresh Green Beans

There’s nothing more comforting than a hearty plate of tender chicken gravy poured over creamy mashed potatoes, served alongside crisp and fresh green beans. This simple yet satisfying meal brings together rich flavors with wholesome, farm-fresh ingredients for a perfect family dinner. This is also something that I utilize the crockpot for those nights I want a hearty homecooked meal, without the extra dishes, and adding time back to my schedule for other things.

Ingredients:

  • For the Chicken Gravy:
    • 2 tablespoons butter
    • 2 tablespoons flour
    • 2 cups chicken broth
    • 1/4 cup heavy cream (optional for creamier gravy)
    • Salt and pepper to taste
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • Shredded rotisserie chicken or leftover chicken (about 1 cup)
  • For the Mashed Potatoes:
    • 4 large russet potatoes, peeled and cubed
    • 1/4 cup butter
    • 1/2 cup milk (or heavy cream for a richer texture)
    • Salt and pepper to taste
  • For the Green Beans:
    • 1 pound fresh green beans, trimmed
    • 1 tablespoon olive oil or butter
    • 2 cloves garlic, minced
    • Salt and pepper to taste
    • Fresh lemon juice (optional)

Instructions:

  1. Make the Mashed Potatoes:
    • Boil the peeled and cubed potatoes in salted water until tender (about 15-20 minutes). Drain and mash with butter and milk until smooth. Season with salt and pepper to taste.
  2. Prepare the Chicken Gravy:
    • In a skillet, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to create a roux.
    • Slowly add chicken broth, whisking continuously to avoid lumps. Stir in heavy cream, garlic powder, and onion powder. Simmer until thickened.
    • Add the shredded chicken and stir until heated through. Season with salt and pepper.
  3. Cook the Green Beans:
    • Blanch the green beans in boiling water for 3-4 minutes, then drain and set aside.
    • In a skillet, heat olive oil or butter over medium heat. Sauté the garlic for 1 minute before adding the green beans. Toss to coat and cook for another 2-3 minutes. Season with salt, pepper, and a squeeze of lemon juice, if desired.
  4. Serve:
    • Spoon a generous portion of mashed potatoes onto the plate, ladle the chicken gravy over the top, and serve with a side of the garlicky green beans.

This meal combines rich, savory gravy, fluffy mashed potatoes, and fresh green beans for a comforting and well-rounded dish.
