There’s nothing more comforting than a hearty plate of tender chicken gravy poured over creamy mashed potatoes, served alongside crisp and fresh green beans. This simple yet satisfying meal brings together rich flavors with wholesome, farm-fresh ingredients for a perfect family dinner. This is also something that I utilize the crockpot for those nights I want a hearty homecooked meal, without the extra dishes, and adding time back to my schedule for other things.
Ingredients:
- For the Chicken Gravy:
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups chicken broth
- 1/4 cup heavy cream (optional for creamier gravy)
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Shredded rotisserie chicken or leftover chicken (about 1 cup)
- For the Mashed Potatoes:
- 4 large russet potatoes, peeled and cubed
- 1/4 cup butter
- 1/2 cup milk (or heavy cream for a richer texture)
- Salt and pepper to taste
- For the Green Beans:
- 1 pound fresh green beans, trimmed
- 1 tablespoon olive oil or butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh lemon juice (optional)
Instructions:
- Make the Mashed Potatoes:
- Boil the peeled and cubed potatoes in salted water until tender (about 15-20 minutes). Drain and mash with butter and milk until smooth. Season with salt and pepper to taste.
- Prepare the Chicken Gravy:
- In a skillet, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to create a roux.
- Slowly add chicken broth, whisking continuously to avoid lumps. Stir in heavy cream, garlic powder, and onion powder. Simmer until thickened.
- Add the shredded chicken and stir until heated through. Season with salt and pepper.
- Cook the Green Beans:
- Blanch the green beans in boiling water for 3-4 minutes, then drain and set aside.
- In a skillet, heat olive oil or butter over medium heat. Sauté the garlic for 1 minute before adding the green beans. Toss to coat and cook for another 2-3 minutes. Season with salt, pepper, and a squeeze of lemon juice, if desired.
- Serve:
- Spoon a generous portion of mashed potatoes onto the plate, ladle the chicken gravy over the top, and serve with a side of the garlicky green beans.
